Thimble Christmas Cookie

Mr. Amish Thimble Cookies are made with butter dough rolled in chopped walnuts with a candied cherry in the center. Another cookie from Grandmother’s recipes. The name is derived from the method that was used to make these cookies. The dough was rolled into a ball, rolled in chopped walnuts, then a thimble was used to press the cookie down and create an indentation in the center for the cherry.
